WHere is a home-style take on a drink from a new menu. Designed as a batch pre-mixed which is packed with the tastes of a festive period, rendering it perfect for your holiday party. Reserve the remaining syrup to use in brunch beverages, desserts, or to mix another batch of this cocktail.
Bikini Recipe
Serves 10 guests
For the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Syrup: Put the listed ingredients in a saucepan, bring to a simmer, stirring until the sugar dissolves. After that, turn off the burner and leave to cool down fully. Pour into an clean bottle, close it and store in the refrigerator, where it will keep for about four weeks.
To make Cocktail Base: Pour all the liquid ingredients into a sizeable container, allow it to infuse for an hour, then filter it preferably using cheesecloth, making it perfectly clear.
When ready to serve: Add 85ml from the batch mix to a mixing glass filled with ice, and agitate lightly for about 60 seconds until cold. Filter to a frosted cocktail glass or equivalent, decorate with a few cranberries and finish with a quick spritz of mandarin oil over the drink.
